In an attempt to stand out from the crowd, Vargas does the sushi thing and it's really quite good [...] Unlike many of the city's top Steakhouses that serve U.S. beef, Vargas serves Alberta Black Angus - and it's excellent. The regular-cut Filet Mignon is thick and cooked to the ideal medium rare. Like the beef satays, every bite is tender and tasty. The Rib Steak, larger and cut thinner than the fillet is just flavorfull and also perfectly rosé.
